I made these muffins a few weeks ago and Kellen ate 2 as soon as I pulled them out of the oven! They are pretty healthy since they have no oil and are made with whole wheat flour. Here's the recipe:
1 cup brown sugar
1/4 to 1/2 cup peanut butter (I used 1/4)
1 banana
1/2 cup applesauce or carrot baby food
1 egg
1 cup whole wheat flour (I used 1/2 white, 1/2 whole wheat. Next time I will try all whole wheat)
1 tsp baking soda
1/2 tsp salt
Optional - 1/4 cup chocolate chips. I put dark chocolate chips in 1/2 my batter, and they were definitely better.
Preheat oven to 350. Mix all the dry ingredients well and set aside. Blend everything else and then sift in dry ingredients (I did not sift, but poured in. However the sifting would make the 100% whole wheat muffins not as heavy.) Spray muffin tray. Bake for 15-18 minutes. Makes 12.
I calculated these at 140 calories per muffin, without chocolate chips and only using 1/4 cup peanut butter.
